The story behind La Quincha’s restaurant is one of passion, in which 2 persons decided to create a unique blend of their Panamanian and Spanish roots into a gastronomic experience.
Evys “Chicho” Ortega, founder and chef at La Quincha, grew up in Chitré, Panama, where he always practiced his passion for tropical music and dance. He fell in love with Venao, where he also met his wife Monica Lupiañez, from Barcelona, Spain.
As the Spanish grandmothers are known to be great cooks, this is one of them, Monica’s mom, taught Chicho how to prepare some of the classical Spanish dishes. Together, Monica and Chicho decided to create the best restaurant in Playa Venao where Spanish food would combine with Panamanian food. They paired their passion, cultures, and attention to detail.
The menu of La Quincha highlights both Spanish and Panamanian cultures. For example, you can find on the menu a typical Panamanian good fried fish with patacones, or a typical Spanish salmorejo. The fusion created by this unique gastronomic offer provides a special experience at La Quincha.





Another part of the experience at La Quincha is the bar, Black Perla, hosted by Fufo, Chichos best friend. The bar proposes high-quality liquors, Spanish wines, and the most high-end famous cocktails of Playa Venao.
In the heart of Playa Venao, La Quincha permits you to try a dessert that was originally sold in a Michelin-awarded restaurant. The Bernard’s mousse with passion fruit was created by Bernard Benbassat, the mentor and teacher of Evis Chicho Ortega. For the pride of their friendship, Chicho decided to feature this renowned dessert on the menu, becoming the most popular one.





The restaurant not only excels in its food and beverage offer. It also provides guests with 5 stars service in a family-like environment, featuring one of the most organized kitchens. With its Spanish Grandmother’s influence and Panamanian comfort food, La Quincha became a second home for many visitors to the Venao area. Chicho, the chef, is always close by, making sure everyone is having a good time.
Every Saturday is Fideua Day at la Quincha, where a special plate is designed with Fideua noodles, on top of the regular menu. On Sundays, they have the special Sancocho Panamanian.
